Vinification: Hand harvest, separate vinification of each grape variety, traditional mash fermentation in stainless steel tanks with spontaneous fermentation and repeated punching down of the cap, malolactic fermentation in oak barrels, 24 months of aging in small oak barrels, followed by blending of the cuvée and 2 months of aging in large wooden barrels, gently bottled in June 2025.

Description

The Opus Eximium No 35 2022 is a multi-layered red wine cuvée from Burgenland, composed of grapes from old vines between 30 and 70 years old. The grapes were hand-picked and each grape variety was vinified separately to preserve its individual character. Traditional mash fermentation in stainless steel tanks with spontaneous fermentation and malolactic fermentation in wooden barrels ensure structure and depth. After 24 months of aging in small oak barrels and subsequent harmonization in large wooden barrels, an elegant, complex wine is produced. Juicy, spicy and with fine tannins, it shows great aging potential and a long, persistent finish.
